Turkey Tenderloin Fresca

Patrick and I rate this as one of the best one pan meals we've cooked. Patrick calls it his favorite meal ever!

TURKEY TENDERLOINS FRESCA
1 1/4 lb. fresh turkey breast tenderloins
2 tbsp. butter, divided
1/2 c. chopped red bell pepper
1 garlic clove, minced
1 1/2 c. shredded zucchini, or cut into strips
2 tbsp. grated Parmesan cheese
2 oz. Mozzarella cheese (1/2 c.)
1/2 tsp. onion powder

Melt 1 tablespoon butter in large skillet over medium high heat. Add red pepper and garlic; cook and stir 3-5 minutes or until crisp-tender. Add zucchini; cook and stir 1 minute. Cool slightly. Stir in Parmesan cheese. Remove from skillet. Slice turkey breast tenderloins in half lengthwise, forming top and bottom halves. Melt remaining 1 tablespoon butter in same skillet over medium high heat. Stir in onion powder. Add tenderloins. Cook 6-7 minutes on each side or until lightly browned.
Spoon zucchini mixture on turkey pieces. Sprinkle with Mozzarella cheese. Cover skillet for 1 minute to allow cheese to melt. Makes 5 servings.

A taste of Christmas

During my daily watching of the Food Network channel, I wanted to make some spiced butter. There are lots of different kinds, but I decided to try a sweet wintery butter. The straight recipe (which I dubbed the Christmas Spice Roll) ended up not being buttery at all. So I tweaked it and tried again. This got me in the cooking mood, and I created a tea cake to go with the butter. I didn't get my bread cooked through, so I cubed it and made a parfait. Long story short, I spent some fun time in the kitchen creating a taste of Christmas. Enjoy!

Christmas Spice Roll
(DO NOT EAT!)

Ingredients
1/2 stick unsalted butter, softened
1 cups light brown sugar
1/2 teaspoon ground cinnamon
1/4 teaspoon grated nutmeg
Pinch ground cloves
Pinch salt

Directions
In a bowl, cream together the butter, sugar, cinnamon, nutmeg, cloves, and salt. Dump onto a pice of cling wrap and shape into a log. Wrap it up and refrigerate it. This will make two recipes of the Spiced Christmas butter.


Spiced Christmas Butter

Ingredients
1/2 stick of butter, softened
1/2 of the Christmas Spice Roll

Cream ingredients together. Dump onto a piece of cling wrap and shape into a log. Wrap it up and refrigerate it. This can be used in place of any butter. Put on a piece of toast or melt for a drizzle over a tea cake.

Christmas Tea Cake

Ingredients
1/4 cup of Christmas spiced butter, softened
1 egg
3/4-1 cup of self-rising flour
flour for kneading

Pre heat oven to 350 degrees. If you have a pizza stone, place in the oven to preheat it. In a mixing bowl, cream butter and egg. Add flour, 1/4 cup at a time, mixing in between. Continue to add flour until dough is sticky but not wet. Flour the counter and dump dough onto it. Knead in extra flour until dough is no longer sticky. Form into a flat loaf. Place loaf onto the stone and bake until a toothpick pulls out clean, about 15-20 minutes. The finished loaf with be something between a cookie and bread.

Christmas Spiced Parfait

In the bottom of a cup, place cubed pieces of the Christmas tea cake. Then put in a scoop of your favorite ice cream. We used coffee ice cream. Finish with some sort of dessert sauce that will seep into the tea cake pieces. The sauce I made was warm and melted the ice cream some. Top with whipped cream if you choose. (We did not do this.) This was a delicious Christmas tasting dessert. If you don't want to use my sauce recipe, just google dessert sauce recipe.

Rum Dessert Sauce

1/4 cup of water
1/4 cup of Christmas spiced butter
1/8 cup of spiced rum

In a small sauce pot, slowly heat water and butter. When the mixture boils, remove from heat and stir in the rum. Serve warm, or store for later use.

Turnip Green Soup

Mom: We first heard of this recipe from Lori Snead and it sounded gross. She invited us over to sample it and it was delicious! I don't think you have to like turnip greens to like this soup. This can be frozen. When buying the knorr vegetable mix we always stock up bc sometimes the store is out.

Turnip green soup

1 pkg. knorr vegetable Mix
1 lb smoked link sausage ( add onion half way through)
Onion to sauté with sausage. Chopped
2 cans navy beans or great northern beans
1 16 oz. bag frozen turnip greens or collards
4 cups water
1 can rotel tomatoes

Add 4 cups water, knorr vegetable mix, rotel and turnip greens. Cook on medium high heat until it comes to a boil then cook for 10 minutes.

Add cut-bite size sausage pieces and beans with its juice. Cover and bring to a boil for 30 minutes.

Approximately 8 servings.

Barbecue Pizza!

Hey!! So, since Joseph and I both LOVE pizza and Mom's barbecue sauce we thought this recipe was perfect to try.  It turned out Great! I rated it an 8 and Joseph a 7.5 :) Let me see if I can post it on here right...  We also ate it with Garden Salsa Sun Chips which gave it an extra something!


Barbecue Chicken Pizza

Barbecue Chicken Pizza
It's hard to resist the tangy flavor of this novel main dish Barbecue Chicken Pizza. In mere minutes, this oven-baked homemade pizza made with lots of easy shortcut ingredients can add a spicy kick to your mealtime.
Serves: 3
Cooking Time: 15 min
What You'll Need:
  • 1 tablespoon olive oil
  • boneless, skinless chicken breast halves (about 1 pound), cut into 1-inch chunks
  • 1/2 teaspoon salt
  • 1/2 cup barbecue sauce
  • (12- to 14-inch) prepared pizza shell, thawed according to package directions, if frozen
  • 1/2 cup frozen corn, thawed
  • 1 cup (4 ounces) shredded yellow Cheddar cheese
What To Do:
  1. Preheat oven to 450 degrees F.
     
  2. In a large skillet, heat oil over medium heat. Add chicken, sprinkle with salt, and saute 5 to 7 minutes, or until chicken is cooked through and no pink remains; drain off excess liquid.
     
  3. Remove from heat and add barbecue sauce; mix until well coated.

Roasted Green Beans With Garlic, Onions and Pecans

2 lbs fresh green beans (I used 1/2 a bag of frozen, thawed)
1/2 cup onion, chopped coarsely (approximately)
1 teaspoon garlic, minced (about 1 clove)
1/2 cup pecans, chopped coarsely
2 tablespoons olive oil
Directions:

Wash beans and break ends off, leaving beans whole. (If using frozen, place beans in a colander and periodically rinse with water until thawed.)

Mix beans, onion, garlic and pecans in a bowl.

Coat mixture with olive oil.

Spread in baking pan.

Bake 20 minutes at 400 degrees, until beans are slightly browned.

Candy Cane Snacks

These are super easy and a festive snack for Christmas. I found this recipe on Pinterest.

Square or rounds pretzels
Candy Cane flavored Hershey's kisses (you can use regular)
M & Ms (I have used both regular and peanut)

Set your oven to 225 degrees. On a baking sheet, lay out the pretzels. Then unwrap and place the kisses on top of the pretzels. Bake for 3-4 minutes; just long enough for the kisses to soften. They will still be in their original shape. Pull them out of the oven and place one M&M on each kiss, pressing down to flatten it. Allow them to set up before enjoying. You can put them in the fridge to speed up the process, but it discolors the M&M.
